For the cake:

• 1/2 cup butter, softened
• 1 cup sugar
• 2 large eggs
• 1 tsp vanilla extract
• 2 cups all-purpose flour
• 2 tsp baking powder
• 1/2 tsp salt
• 1/2 cup brewed and cooled Blackout Blueberry Crumble Coffee
• 1/2 cup sour cream
• 1 cup fresh or frozen blueberries

For the crumble topping:

•1/2 cup brown sugar
•1/2 cup flour
•1/2 tsp cinnamon
•1/4 cup cold butter, cubed


Instructions:

  • Preheat oven to 375°F and grease a 9-inch square or round cake pan.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well, then stir in the vanilla.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Alternately add the flour mixture and brewed coffee to the butter mixture, beginning and ending with flour. Fold in the sour cream, then gently stir in blueberries.
  • Pour the batter into the prepared pan.
  • Make the crumble: In a small bowl, combine brown sugar, flour, and cinnamon. Cut in the cold butter until crumbly. Sprinkle evenly over the batter.
  • Bake for 50-55 minutes and then let cool slightly, slice, and serve warm with a mug of Blueberry Crumble Coffee.
