Ingredients:

For the cake:

• 1/2 cup butter, softened
• 1 cup sugar
• 2 large eggs
• 1 tsp vanilla extract
• 2 cups all-purpose flour
• 2 tsp baking powder
• 1/2 tsp salt
• 1/2 cup brewed and cooled Blackout Blueberry Crumble Coffee
• 1/2 cup sour cream
• 1 cup fresh or frozen blueberries

For the crumble topping:

• 1/2 cup brown sugar

• 1/2 cup flour

•  1/2 tsp cinnamon

• 1/4 cup cold butter, cubed

Instructions:

  1. Preheat oven to 375°F and grease a 9-inch square or round cake pan.

  2. In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well, then stir in the vanilla.

  3. In a separate bowl, whisk together flour, baking powder, and salt.

  4. Alternately add the flour mixture and brewed coffee to the butter mixture, beginning and ending with flour. Fold in the sour cream, then gently stir in blueberries.

  5. Pour the batter into the prepared pan.

  6. Make the crumble: In a small bowl, combine brown sugar, flour, and cinnamon. Cut in the cold butter until crumbly. Sprinkle evenly over the batter.

  7. Bake for 50-55 minutes and then let cool slightly, slice, and serve warm with a mug of Blueberry Crumble Coffee.
