Coffee Glazed Turkey

coffee glazed turkey ½ ounce green chili or Serrano (or less, depending on your desired level of “heat”)

4 ounces yellow onion, finely diced

1/2 ounce garlic, minced

3/4 tsp olive oil

¼ tsp coffee grounds

1/2 Teaspoon sea salt

1/2 Teaspoon crushed red pepper

¼ tsp ground cardamom   

2 ounces stiff coffee

2 ounces Worcestershire sauce

2 ounces ketchup

1 ounce apple cider vinegar


1.    Cut up vegetables, pressing them with the knife blade to bring out their juices and flavor.

2.    Place in skillet with the oil and sauté for three minutes over high flame.

3.    Add the coffee grounds, salt, red pepper, cardamom.

4.    Add coffee, Worcestershire sauce, ketchup, and apple cider vinegar. Simmer for about 45 minutes. Use as glaze or  marinade with turkey or chicken.


Don’t forget to put in love – love of coffee and cooking into one.

And while cooking, try mixing in a little liqueur with your espresso.
