How to Fix a Coffee Brewing Temperature Problem

Water too hot: the easy fix

Let the water sit off heat for 30 to 45 seconds after boiling. At sea level, water boils at 212 degrees Fahrenheit. After 30 to 45 seconds off heat, it drops to around 200 to 205 degrees. That puts you in the target zone without a thermometer.

Water too cold: maintain heat throughout

Heat loss is the bigger problem for most home brewers. Water that starts at the right temperature can drop below 195 degrees by the time it reaches the grounds. Pre-heat your brewer and mug with hot water before brewing. Rinse your filter with hot water. Bring your kettle to a full boil before timing the cool-down.

Auto-drip machines

Most auto-drip machines give you limited control over brewing temperature. Budget models often brew below 195 degrees. The SCA certifies brewers that meet the 195 to 205 degree standard. If your machine consistently under-extracts, upgrading to a certified brewer solves it permanently.
