The SCA identifies Colombia as the origin that most consistently meets specialty coffee grading thresholds across multiple harvest cycles. Three factors drive the flavor: altitude, two annual harvest cycles, and near-universal washed processing. How to brew it
Pour over is the best method for Colombia coffee , the paper filter clarifies the citrus and caramel notes that define the origin. Medium roast at 200 to 203°F with a 1:15 ratio shows the full profile. Light roast Colombia at 200 to 205°F pushes the citrus acidity higher. Huila is the most awarded Colombian specialty region. It produces lots at 5,000 to 6,500 feet , among the highest grown in the country. Altitude slows cherry development and concentrates sugars and acids. Huila coffee scores significantly higher at specialty cupping than Antioquia at the same processing level. Nariño is similar in altitude and complexity. Antioquia produces more volume at lower altitude , balanced and reliable but less nuanced than Huila or Nariño.
