Cold brew coffee is not iced coffee. Iced coffee is hot-brewed coffee poured over ice. Cold brew steeps ground coffee in cold water for 12 to 18 hours. No heat at any point. The Cold Brew Coffee Method

The 4-step method

Step 1: Grind coarse. Coarser than French press , large, chunky, irregular grounds. Fine grind produces bitter, over-extracted cold brew. Step 2: Combine. Add grounds and cold water to a large jar or pitcher. Stir to make sure all grounds are saturated. Step 3: Steep in the fridge. Cover and refrigerate for 12 to 18 hours. Do not steep at room temperature , the fridge controls fermentation and keeps the coffee clean-tasting. Step 4: Strain. Pour through a fine mesh strainer lined with a paper filter or a clean cloth into a new jar. Press the grounds gently , do not squeeze. Discard the grounds. Dark roast's low acidity, heavy body, and oil-forward profile all survive the long cold extraction intact. Light roast in cold brew turns thin and acidic. How to serve cold brew coffee

Full-strength cold brew (1:8 ratio) can be served straight over ice. Concentrate (1:5 ratio) needs dilution , typically 1:1 with water, milk, or oat milk before serving over ice. Black cold brew over ice: no dilution needed at 1:8. Cold brew with milk: 1:5 concentrate plus equal part whole milk over ice. Cold brew tonic: 1:5 concentrate plus sparkling water, ratio to taste. How long should I steep it?

12 to 18 hours in the fridge. Under 12 hours produces under-extracted cold brew , thin and weak. Over 24 hours produces over-extracted cold brew , bitter and harsh. The sweet spot for most dark roast cold brew coffee is 14 to 16 hours. Coarser grind allows a longer steep. Finer grind requires a shorter steep. Start at 14 hours and adjust one variable at a time.

Can I steep at room temperature?

Technically yes, but the fridge is better. Room temperature cold brew steeps faster , 8 to 12 hours , but can develop off-flavors through mild fermentation. Fridge steeping takes longer but produces a cleaner, more stable cup. If you steep at room temperature, shorten the steep to 8 to 10 hours and strain immediately. What is the best ratio?

1:8 for a full-strength, drink-straight cold brew. 1:5 for a concentrate you dilute before serving. The 1:5 concentrate is more efficient , it takes up less fridge space and keeps longer. Dilute 1:1 with water for a standard cup, or 1:1 with milk for a cold brew latte. For a lighter cold brew coffee, extend to 1:10. Always measure by weight for consistency. Does it have more caffeine?

Cold brew concentrate does , more coffee per ml than drip. A 1:5 concentrate has roughly 2 to 3 times the caffeine of standard drip coffee per ounce. Diluted to 1:1 before serving, the caffeine per serving is comparable to a strong drip cup. Full-strength 1:8 cold brew coffee is similar to standard drip. Why is cold brew coffee less acidic than hot coffee?

Heat accelerates extraction of chlorogenic acids, which are the primary source of acidity in hot-brewed coffee. Cold water extracts these acids more slowly and less completely. The result is a cup with up to 67% less acidity than hot-brewed coffee using the same beans. This is why cold brew coffee is the preferred choice for acid-sensitive drinkers.
