Clever Coffee Dripper: How-to Guide
Essentially a pourover cone with a stopper allowing you to control steep time. This is one of the most approachable ways of brewing coffee and can easily be turned into a pourover.
Need:
Clever Coffee Dripper, #4 filters
Coffee nerd options:
Grinder, pourover kettle, scale, timer, thermometer
Recipe basics:
Brew time: 3 minutes
Temperature: 205 deg F
Grind setting: drip
Ratio: 1:16 coffee to water
Below measurements are interchangeable. For example, you can use 24 g of grounds to produce a 12 oz cup of coffee.

1. Rinse the filter well with hot water in order to reduce any papery taste and warm the brewer.
2. Add coffee ground at a normal drip setting.
3. Add half of your hot water and cover. There is no need for elaborate pouring techniques.
4. After steeping for 1 min. 30 sec., add the rest of the hot water and steep for an additional 1 min. 30 sec. (for a total brew time of 3 min.).
5. Place the Clever atop your mug or server to start the “pour,” which should last about a minute, and enjoy!
For further exploration:
- If you prefer metal-filtered coffee, try using a Swiss Gold filter basket instead of a paper filter.
- A coarse grind coupled with a longer steep time works well, resulting in a clarified press-style cup of coffee.
- The Clever can also be used as a pourover by placing the device on a mug while adding water.
- This is a great device for the office, because cleanup only involves removing the filter with the coffee and rinsing out the Clever.
