How to Use a Clever Coffee Dripper: Step-by-Step Guide

The Clever Coffee Dripper brews coffee using full immersion — like a French press — but drains through a paper filter that removes sediment and oils. The result is a full-bodied cup that is clean and clear in the way French press never quite manages. It takes 3 minutes and requires no special pouring technique.

Clever Size Coffee (g) Coffee (T) Water (g) Water (oz)
Small (10 oz) 18 g 3.5 T 290 g 10 oz
Large (18 oz) 34 g 6.5 T 525 g 18 oz

Step 1: Rinse the Filter

Place a Melitta #4 paper filter in the Clever Dripper. Pour hot water through the filter to rinse out any papery taste and pre-warm the dripper. Let the water release into the mug below, then discard. Shake out excess water from the filter.

Step 2: Add Coffee

Measure your coffee by weight — 18g for the small Clever, 34g for the large. Add to the filter and level the bed gently by shaking. The Clever should be sitting on a flat surface, not on your mug, while you add coffee and water.

Step 3: First Water Pour

Start your timer. Pour half of your water slowly over the grounds until all grounds are saturated. No controlled circular pour required — any coverage pattern works. Put the lid on to retain heat and steep for 1 minute 30 seconds.

Step 4: Second Water Pour and Stir

At 1 minute 30 seconds, remove the lid and add the remaining water. Replace the lid. Steep for an additional 1 minute 30 seconds (total steep time: 3 minutes). At the 3-minute mark, stir gently to break up the floating crust of grounds.

Step 5: Release and Drain

Place the Clever Dripper on top of your mug. The valve at the bottom opens automatically and brewed coffee drains through the filter into your cup. Drain time is 45 to 90 seconds. Do not rush it.

If the drain takes longer than 2 minutes, grind coarser next time. If it drains in under 30 seconds, grind finer. Drain speed tells you whether your grind is in the right range. For more on adjusting grind to taste, see our grinder dial-in guide.

How Clever Compares to French Press and Pour Over

A Clever Coffee Dripper and a glass French press placed side by side on a dark countertop with finished cups of coffee beside each

The Clever sits between French press and pour over in cup character. The immersion steep gives it the body and richness of French press. The paper filter removes the oils and sediment that French press lets through. Fuller-bodied than standard pour over. Cleaner than French press.

It is more forgiving than pour over because technique does not matter — no gooseneck kettle, no controlled pour, no bloom timing. And it is cleaner than French press because the paper filter does the work the metal mesh cannot. For drinkers who want that middle ground, the Clever is the answer. Brewing Variations

Coarse grind / longer steep: Use a coarse grind and steep for 4 to 5 minutes. Produces a heavier, press-style cup with more body.

Metal filter: Replace the paper filter with a reusable metal filter. Richer cup with some sediment — closer to French press character.

Pour over mode: Place the Clever on your mug while adding water and skip the steep. The valve stays open as you pour, producing a standard pour over cup.

Iced Clever: Reduce water to two-thirds and pour directly over ice. Stock up with a five-pound bulk bag so you always have fresh beans ready to experiment. On mornings when setup is not an option, our instant coffee delivers a bold cup in seconds. And for single-serve ease, our coffee pods are always ready.

Frequently Asked Questions About the Clever Coffee Dripper

What makes the Clever Coffee Dripper different from a pour over?

A standard pour over drains continuously as you pour water. The Clever Dripper has a valve at the bottom that stays closed until you place it on a mug, allowing you to steep the grounds in water for a set time before draining. This gives you the full immersion extraction of a French press combined with the clean filtration of a paper filter — all without needing a gooseneck kettle or controlled pour technique.

What grind size should I use for the Clever Coffee Dripper?

Medium to medium-coarse — between table salt and breadcrumb texture. This is slightly coarser than a standard pour over grind and slightly finer than a French press grind. If the drain takes longer than 2 minutes after placing the Clever on your mug, grind coarser. If it drains in under 30 seconds, grind finer. Drain speed is your diagnostic signal for whether the grind is correct.

How long should you steep coffee in a Clever Dripper?

3 minutes total using the two-pour method: add half the water at the start and steep for 1 minute 30 seconds, then add the remaining water and steep for another 1 minute 30 seconds. After 3 minutes, stir to break the crust and place the Clever on your mug to drain. For a heavier, press-style cup, increase the steep to 4 to 5 minutes with a coarser grind.

Can you use the Clever Dripper without a scale?

Yes. The tablespoon measurements in the ratio table above work as a starting point — 3.5 tablespoons for the small Clever and 6.5 tablespoons for the large. A scale produces more consistent results because the same tablespoon holds different amounts of coffee depending on grind size and bean density, but the Clever is forgiving enough that volume measurements produce a good cup for most people.

Is the Clever Coffee Dripper good for the office?

Yes — it is one of the best brewers for office use. Cleanup requires only removing the filter with the spent grounds and rinsing the Clever briefly. No mesh filters to scrub, no multiple parts to clean. Any kettle works. No pouring technique is required. One Clever can brew for multiple people in sequence without any complex setup between brews.
